I think that it was stated, but maybe it was pretty quick. Either way, it's not too complicated.

Spoiler: How Alexia was dealt with:

Alexia was locked into the dungeon of this castle along with the monsters. (Keep in mind that it takes several years for the saint to fully become the witch.) Idea was for the monsters to kill her since, since she's not the witch yet. Or backup plan: She's locked in a dungeon and can't escape. But what happened was that the monsters immediately accepted her and so didn't attack. Then later, when she became the witch, they helped her escape. (Keep in mind that both witch and saint are invulnerable to all but each other's powers, and neither can die of natural causes. Monsters are related to the witch, and so can kill the saint.)

once she slew the previous witch, Aiz immediately imprisoned her in Saint's castle and released the monster to kill her, but the betrayal triggered Alexia's witch transformation so Alexia becomes a witch, for monster the witch is an absolute, so they won't attack her and help her escape the saint's castle

from the novel, Elrise has already been active as a saint for 7 years, and the demons were relentlessly hunted by her, the present-time demons only have lower than 10% demons compared to before Elrise became active. and it was mentioned in the novel that if the situation calls for the saint, they will investigate the case to ensure the witch was not there first before escorting Elrise to the scene.
for the greater demon (the chapter refers to them as a superior monster) from Aiz's POV the greater demon was no more due to Elrise hunting them frequently, and people believe the greater demon was born by the witch's hand, but there is another possibility, the demon who fights and feast on many other demons could become greater demon too, but the chance was low, so most greater demon was created by the witch, the greater demon invading the capital was born this way, so no one anticipates it to happen because the rumor of the witch gone into hiding due to her fear of Elrise
