NGL, the author did the character dirty. All the weapons, equipment, and supplies could have been stuffed in his inventory. True some of it would have been junk, but most of it could have been repurposed into something useful...

I guess it could be so the theft won't be as easily detected. If a damaged sword that was in a dusty crate in one of the corners disappears, it won't be as immediately apparent, as if several things disappear.
Even if they haven't really been to the storage room for a long time, they might check it if one of the guards report seeing someone before being knocked out.
