If Tarou was the only person who could see Eve, the argument about her being a pure delusion would be more applicable.

Even without corroboration from other people, Tarou has still observed that Eve can go places he's not, do things he can't, and perceive things he has no way of knowing. If she's a delusion, then he must be some sort of high-level psychic who can do all these feats of mind control and clairvoyance and created this imaginary companion to personify them. I don't see why he should find that option more plausible than simply accepting Eve's reality.
