(i just picked up bleach and it was good so im thinking about other iconic titles so One Piece came up...naturally)

I may sound a bit opinionated, a little bit, but One Piece is ASS. Not recommended, 4/10.

Okay, jokes aside, I respect Eichiro Oda and One Piece for the sheer scale of its world-building and the absurdity of it all but dedicating yourself to read more than 1000+ chapters can be extremely intimidating, and is definitely not everyone's cup of tea and certainly not mine.

Instead start small first,

full metal alchemist (64 eps)
then HunterxHunter or D gray man (128 eps)
goes something a little longer like Toriko or Gintama with
Eating something like Naruto and Bleach

I do this on my gap year. I start one piece when it's just 900ish episode, finished FMA, watched all bakemonogatari series, watch stein:gate, and catch up all the seasonal anime.

Doing things strictly by popularity leads to very toxic life habits, and when it comes to free time... look for things that you feel passionated about or interested in. It is usually said that in manga the first 15 pages must catch the interest of the reader (that's something Araki from Jojo's confessed when crafting a manga), so you can try as many series as you want but distrust those who say "you'll get hooked in by the 100th chapter" (that's called addiction).

Read up until Arlong Park (chapter 95), if you like that arc you will love the rest of the series.

Don't do very long shonen like that. They all decay with time and became parody of themselves. Series with 30+ tomes are a no go and must be started with extreme care. One Piece is one of them.
