After so many Gen updates in a row it feels like it's been ages since Nobu updated but I guess it's only been a month.

I would not suggest trying to make Chicken Tataki at home if you live in the States; I remember reading a study a while back that found that 90%+ of chicken sold in American supermarkets contained salmonella.

I imagine Nobu is sourcing their chicken for tataki from a vendor that doesn't uses factory farms.

Chicken heart is delicious, with a unique texture. Of course, you might have to get used to it.

As others have mentioned do not use any old chicken for tataki. But Nobu is sourcing their chicken from small Japanese farms where they aren't raised in terrible factory conditions, and they would have been obsessively tested before being given to Nobu - there's nobody as obsessive as a Japanese craftsman, and if word got out you'd poisoned your customers... The big guys can survive that with enough kowtowing and money, small ones not so much.

That said, I've had chicken tataki in Japan and was just not impressed. It's nowhere as good as yakitori! Leave the tataki to beef and horse, which are excellent. But of course they had a moral to get across here.

I've made this argument before, and I'll keep making it, but using "whatsontap" breaks my immersion of the world because it assumes everybody in the other world is stupid.

Remember, the Japanese members of Nobu are speaking Japanese to the customers, but the customers are speaking their own language—probably German based on the terminology used within the comic—back to the staff; for them to be able to communicate with each other, there as to be some sort of translation magic going on—after all, German isn't exactly a commonly-taught language in Japan, and Taisho started working at Shinobu's family's restaurant straight out of high school, so it's not like he had a chance to travel the world—because otherwise, they wouldn't be able to understand each other. This means, going by the "whatsontap" translation, customers would be saying "whatsontap" in their own language to the Nobu staff; this takes me out of immersion because, are you telling me none of them realize they're just saying "what's on tap"?

At least with the "toriazu nama" translation, it'd make sense that the patrons wouldn't know it means "what's on tap" because to them, that'd be a proper noun due to being in Japanese.

also, it does NOT mean "what's on tap", AT ALL

"toriaezu nama" means something akin to "to start, a fresh one". the rationale was very well explained in one of the first chapters, I don't remember if within the manga itself or from some translation notes. "whatsontap" is just an awful choice from the part of the "official" translators (which I need you not remember, are often blasted by the community precisely because of their terrible choices).

most salmonella problem in poultry is caused by factory farming, which is poorly masked by chlorinating the chicken (that only make it looks clean).
find some certified poultry farm provider and there should be no issues with eating it raw.

As someone who doesn’t like beer, I am curious how the ale tastes like.

Nobu's Whatsontap is Japanese lager. Ale is usually sweeter than lagers.

Another load of bullshit about japanese food safety measures. Raw chicken meat is unfit for consumption, period.
The prevalence of salmonella in japanese chickens is exactly the same as the rest of the world: 30-40% in organic, free range farms, 80-90% in battery-grown chickens. The consequences also speak by themselves: the incidence of foodborn diseases in japan is almost doubled compared to Europe (1 case every 100'000 abitants in Japan against 0.52 cases every 100'000 abitants in Europe in 2018), the main cause always being the consumption of raw or partially cooked food. And those are the cases so dire that requires hospitalization. In particular, in Kagoshima and Miyazaki prefectures, chicken tataki is the first cause of food poisoning.
And don't even make me start on anisakis...
