I do love myself some sour kimchi but if you make some yourself, you can have it less sour. Just ferment it for a short time or even just eat it right away. It great no matter how long you ferment it.I already knew that kimchi is a fermented cabbage, but I was still surprised by how sour it is when I first taste it. While I still can't handle eating a bowl of just kimchi due to that sourness, I do like it when paired with other things like in this one.
