I was thinking the same, it may explain why Ginko got a oni arm when demonized.

Have we ever seen her mother by the way?
We have. She's in chapter 12.5, where we see Ginko sad because a bird she was trying to help died. She's a sweetheart there, too: Ginko wants to give up all her rice to feed the bird if its still hungry.

Ginko's mom is a kind woman who is trying to raise Ginko as a gentle soul, but her husband keeps talking about samurai. She is strong, though, the end gag being that she seems to be able to routinely pull her husband's ear off on accident.

I don't think the Demon lord is Ginko's mom, even though the lord is clearly Japanese coded. This world's Japanese mythology, where Buddha is a hunter of demons and protects the world Ginko is from against them, gives us a different hint; that the demon lord is originally from Japan but was driven away from it.

but who know

Really is nice to enjoy a well drawn battle manga with loads of weeaboo fan service. Superb pacing and such nice paneling. Saitou Keigo really gets it.

So if the Demon Lord is Japanese themed or straight up from Japan, maybe this Demon Lord was someone who was transported from Japan by Buddha, seeking battle like Ginko. And after defeating the old Demon Lord, they became the new one, the one we're shown in this chapter. Maybe Ginko will go through a full-blown oni-transformation by the end of the story and become the new Demon Lord herself.

Also, the "Oni lord" appearance makes Shuten Douji or Otakemaru come to mind. Otakemaru would definitely be fitting as a kijin (demon god).
