To be fair, it's not like Suiboku is famous in this day and age. If you heard about someone making artifacts and elixirs, your assumption would probably be 'alchemist' or 'magical engineer', not 'ancient, vengeful demigod'.

It’s the kind of thing that he was known for, in the LN.
He doesn’t regret killing people he intended to kill; he regrets killing people as unintentional collateral damage while training, or when he lost his temper and just went on killing sprees without only killing the people he was mad at.

Also, I checked in LN Vol 9.
It lays out explicitly that Suiboku may be a Sage, and most of the time won’t act out of earthly desires, but being underestimated definitely makes him mad enough to commit genocide.
He was going to wipe out a couple countries to make them understand his power, and the Head of House Sepaeda had to talk him down.

“Don’t worry, I won’t touch the Arcana Kingdom. The rest of the continent, though…eh.”

in the light novel about 100 spies tried to kidnap him from different countries. the kingdom underestimated the stupidity of his neighbors and let them slip to suiboku`s forest. finding his location was pretty easy as its well known that he lives in that forest.

but he didn't flip out. he just casually mention the erase the counties. like he is going to get some milk.
but the kingdom placate him and ask to let them deal with the neighbors. they invited the neighbors for their triple wedding. and does a show of force there.

its another plot hole created by the manga. cause what does a spies being captured accomplice? the neighbors can just pretend its not them who send them and that's the end of it. if they just let those spies to die. then there is no other problem other than them being wary.

but to instantly betray humanity to side with the lizards for it is a plot hole.

if a country were to act under such weak and shaky reason. then a coalition would be born from other counties to attack the kingdom who assaults another country. in their minds its just a pretense to expand and concur. so they would band together to stop them.

the reason why it doesnt turn out that way is. in the lightnovel. the prince of that neighbor country insulted the groom in his wedding with plenty of offhand remarks about the kingdom. then gets beat for it, and took it for a declaration of war. after sending sansui to throw gloves in the face of that neighbor king. and leaving a road of blood from every one who tried to stop him.

that neighbor king then gets reprimanded by the other big countries who were all witnesses of the event of the neigbors prince`s beating. making it clear that no such coalition will be born.

so the king betrays humanity after his military was annihilated and ensured that he has no allies outside his country.

p.s the items suiboku makes are coiled peaches/peach of immortality. which in small dose invigorate the body making you look youthful. and divine ginseng fruit. which heals missing limbs and diseases.(or the other way around) they are references to the Journey to the west. where a immortal grew a baby shaped fruit.

the other countries took notice of it after the republic/ukyou replicate those fruits using the divine silo/producer of food danua. which can create food the user has eaten the amount depends on the user`s compassion. the food disappears after awhile. so it cant reach the whole country.

It's not just "ginseng" or "confectionary", it's basically a "fruit of eternal youth" and "elixir, that can heal anything and everything, except death itself"

For those, people would even challenge the god... atleast until they learn that the god is much more terrifying than they could ever believe.
