Hey now, if you brew espresso properly, it's sweet. not bitter. Coffee grounds release the sweeter-tasting chemicals early in the steep. When you steep longer you release bitter flavors. The challenge is steeping long enough that it doesn't taste watery, but not so long it becomes bitter. How espresso works, you tightly pack very finely ground beans and force pressurized hot water through them. It's meant to quickly draw out the sweet flavors without getting the bitter. If you get the fineness of the grounds, don't overpack them, and set the water temp right, it comes out sweet and creamy. Delicious!

One thing I've noticed in Japan is they tend to go for very dark roast. That's their default. The trend of lighter roast only start a few years ago and not sure how widespread it is now.

Lol, the whole cafe is monitoring our dorky pair. It's like every NPC is us self-inserting into that universe.

Manager sneaking that front-row seat to get the experience and to have more stuff to brag about to the other two.

OMG, these facial expressions are glorious. I don't know how Masuda-sensei does it, but he keeps bringing out banger after banger.

The main problem is they tend to brew with charcoal, especially chain stores. Specialty is rather sparce, often brewed by inexperienced part-timers, and expensive where it exists.

There's a difference between Dark Roast, and Burned-to-Crap. Darker roasts burn up more of the natural sugars and furons than lighter roasts, but they also caramelise those sugars. You can still get a sweet flavor from a dark roast. Burned roast though, just tastes bad.

Burned roast is a strategy of big importers who buy cheaper beans, combine a variety of strains together, then over-roast them to make it taste uniform. Think Starbucks. It's enshittified coffee.

Yeah, thanks. This was fixed within 5 mins of the chapter uploading. When the page was then reuploaded, it seems MD derped out and kicked another page. It should all be good now though. Thanks for the heads up though!

That was such a sweet thing to say too!
Depends on the type of roast, light roasts tend to have a very acidic and tangy taste. Medium roasts are a little more mellow but still have some fruity notes, often close to stone fruits like cherry or apricot. Dark roasts can be more bitter but allow have deeper flavors of chocolate/caramel.
