How much alcohol was in that thing for her to get blackout drunk? Or is she just as susceptible to alcohol as the average manga character is to water and/or cold?

Hello, there.

It's a good thing she didn't eat that cake outside on a night where there would've been rain. Cause then she would've passed out and gotten cold and wet and probably caught the dreaded manga super-cold and, I dunno, probably died or something.

Cakes with liquor in them have the liquor added after baking. The cake itself can be soaked in liquor or the liquor might be present in the fruit, like cherries, that are in or on the cake. Still it's not like it's a fruity cocktail that covers up the taste of the alcohol, unless the cake reeks of alcohol or your tolerance is comically abysmal, getting blackout drunk from cake is kinda....
Unfortunately this isn't the first time I have seen this kind of plot device in manga. It's pretty strange, considering alcohol consumption in Japan is quite commonplace and not exceptionally low, so it's not like light novel authors/mangaka wouldn't know their stuff. In other words, it's not like firearms, for example, where a mangaka could be pretty much expected to never have held a gun in their hands, considering Japan's extremely draconian weapon laws. Or how Japan's high pacifism has made the average mangaka quite blissfully ignorant in military matters.

I'll have to write this down under the usual "fictional weird stuff from the West" category that occasionally appears in manga to drive the plot forward.

I'd categorize it more under "exaggerating the effects of an illness/drug/placebo effect beyond anyone and everyone's suspension of disbelief with wild abandon just to set up a horny/romantic moment."

There are people IRL who can be drunk with just one beer. There are some kind of cake that have a decent amount of alcool and use strong alcool, enouth for people who are weak and never drink to be tipsy.

The USA is the most armed country in the world and the entire Hollywood nearly always mess up all the military and weapon handlind aspect of their film. It's the same for TV show and comics.
There is no link between the habbit of people or the law of their country and their understanding of how things work.
I mean, in all democracy most people dont even understand politic.

If I remember correctly, she is the one who cheated on MC, then spread bad rumors about him at the IT company he worked at. He got depressed, quit his job, found Nina the Vtuber, then started working at the convenience store once he got bit more energy to live again.

Funnily enough, from a biological standpoint, asian people in general are more susceptible to being drunk, since they have a less effective alcohol metabolism due to a mutation in the CYP2E1 enzyme present in asian population, which leads to higher concentrations of acetaldehyde in their bodies, which is believed to be the chemical associated with alcohol's toxic effects (after all, getting drunk is still getting intoxicated, regardless of how well accepted it is socially).

However, even though it works as an excuse for those plots, it really shouldn't be enough alcohol to get someone blackout drunk, that would make Nina pass out if she actually drank sake or any other alcoholic beverage lol

I mean, didn't she pass out mostly cause she didn't sleep the night before? Its told to us like in next panels after she dropped dead on MC. The alco in the cake just helped exaggerate the issue"?

I always thought that using liquor in baking cooked it out? Not that I use any personally, but that was my understanding.
i had a rhum cake called a baba au rhum, its just cake drenched in rhum so maybe its like that where the alcohol isnt cooked,
