Let's put it this way for the doubters, and feel free to use my analogy elsewhere: gender bender is like red pepper flakes, white pepper powder or other spicy ingredients. Some people absolutely want all the fire and may even want ghost peppers. On the other hand, some people only lightly season their dish with spicy ingredients. The former group will almost always grumble if you try to serve them something that only has hints of heat, but food connoisseurs will recognize the value of either presentation. Likewise everyone can agree it's totally pointless if you under-season spicy ingredients to something that completely neutralizes them, like something with cheese or white sauce. If you want a spicy dish with either, you have to adjust for it and add a bit more.
Where I'm going with this: yeah, I've read some stories on here where it beggars the point why it's gender bender at all. I don't really feel this is one of them, Youko is very clearly a fish out of water still. Heck, the joke at the end of this chapter is her realizing for the first time what a lot of women will pay for skin care.
It just happens that, as a guy, she was shy and withdrawn. She didn't know she'd enjoy or prefer being a girl but once it happened, she embraced it. Between that and her mild personality, it feels less stereotypically like a gender bender story. But it's just as valid as any story where the gender bender is an alpha male, surly nerd, hypersensitive femme-boy or someone else who'd grumble or fixate on the experience the entire time.
Another great one to check out if you haven't yet? "A Boy Who Loves Genderswap Got Genderswapped, so He Acts Out His Ideal Genderswap Girl". It's another story about a newbie to femininity who embraced it, but the difference is that they were a fan of these sort of stories and are getting to live one. And the joke is that they're actively trying to keep the flavor going even though they act more like an actual girl than a guy who has become a girl. It's a nice play on these very themes.
