Here's the thing with the mantis shrimp - its eyes (structurally) are still inferior to human eyes - they cover a larger spectrum, but are inferior in other aspects. Sometimes less is more, and this is one such case, since even with all the additional wavelength peaks, and polarized light receptors, the mantis shrimp ultimately has less information because of the superior processing abilities of a human.

Even then, that is still beyond the point. As random mixing + a speed race to the final gate does not guarantee superiority, it guarantees optimizing for movement speed and heavily relies on randomness. The supposedly superior humans could have easily edited their DNA, introducing only superior genes, rather than introducing random crap like you saw. I'm sure the mangaka was planning to explore the concept in better depth and have a more conclusive resolution
I disagree, I don't see any way in which the premise may have been salvaged.
