He knew the witch probably sensed him being weary, so he turned the situation around into him being nervous because of a business proposition not because he saw her for what she is (a monster, a good monster but he doesn't know that she's good anyway)
Not only that he DID turn the situation into a lucrative business for himself, he even took a mandragora when he was clearly afraid of doing so just to prove a point.
Guy's built for that shit.

Just a clarification, he doesn't actually knows for sure if she is a monster. Appraisal failure or inaccuracy happens when there is a large difference in magical power or perception inhibition is used. There are no other real 'demonkind' except for the demon kid so nobody knows for sure what kind of status a veteran demon has. The issue is since it hasn't been confirmed by the other demon whether she is really demonkind or not, there's a possibility she CAN be a monster.

Due to a lot of misunderstanding and perhaps also to loneliness due to being the sole demon there is Nikolaus become attached to her (tsundere style), he believe she is a long tenure demon who survive from the catastrophe hundreds of years ago, he become overprotective not wanting what he believe his only fellow demon to go to the front line and insist she do support roles instead since she can make potions and stuff

He's like a son who doesn't want to have her single mother do work
