I've got a few that I always love to talk about, but they're pretty old, so anyone who's been around for some time will have already read them or heard about them.

History Strongest Disciple Kenichi - really solid early 2000's martial arts rom-com, always fun to read that. They had an anime, but not the full story. The English VA cast for the anime is incredibly stacked tho.
Zatch Bell!! - An absolute legend of a story, and has a full anime to boot, although I like the pacing of the manga better. There's even a sequel manga, Zatch Bell! 2 that hasn't gotten swept up in its predecessor's legacy, as improbable as that is.

There's some newer ones, like The Faraway Paladin - a still ongoing monthly series that really does have it all; great art, well-written characters, an isekai that doesn't succumb to the typical wish fulfillment, and really good writing that fleshes out the world. Even has an anime too that's about as beautiful as the manga, if that's somehow possible.
Those are the ones that come to mind, but there are others that I like, but none that stand head and shoulders above others like these.

Psychological isn't something people would recommend but I proudly pick Freesia - interesting story with a schizophreniac MC in a Japanese society that is at war, and has passed a law legalizing retaliatory killings, not popular probably due to rough sketching style, but that's what makes the environment look gritty.

Keyman, no question. Beautiful artstyle, adult cast with adult problems, delightful homages to western comic books, crazy plot, relatable characters (and a very interesting examination of morality that doesn't get too preachy, but doesn't go all-out edgy either; Devonea and Walter's subplots especially). Given the popularity of "what if Japanese authors did US superheroes" media, I am utterly baffled as to why it remains relatively obscure.

Also, I wish more people who like cats would read Nobara Nonaka's stuff, because her style is delightfully silly.
