Because it's not onomatopoeia in the source. "Squeak" would be "チュウ" (chuu), but she says "りす" (risu) which just means squirrel. The analogy to cat characters saying "nya" doesn't work, because nya (にゃ) actually is onomatopoeia.

To make the analogy work, you would need a cat character that randomly says "neko", but I hope you'd agree no reasonable translator would then render that in English as "meow".

Since English fiction doesn't really have this trope, it would've made the most sense to either drop it entirely or leave it in transliterated (the two most common approaches for e.g. nominal honorifics like "san"). It's not like the translator here is trying to preserve every nuance in the first place (things like Shuu using the more masculine "ore" and Tamiko using the childish "atai" as their pronouns, for example).
