He didn't really power up out of nowhere. He killed the knights, received a power up from that (and he could kill easily the knights, only the water knight was a problem but when he fought the knight he was alone, so he couldn't kill-> absorb more magic power), then he absorbed the water knight. He lost the first time because he wasn't prepared for the water knight and he tried to attack with spells (that didn't work).

TL; DR: he got powerup from killing knights + had time to rethink his tactics.
