There a reason why Intermediate Cartridges, and with Hollow-Point none less, was widely adapted, instead of Fully Powered ones, who relegated to machine guns, sniping/marksmanship and Big Game hunting. They are doing well enough against wild life, especially depending on material of bullets.
In a fantasy world where even Godzilla-sized monsters can exist, ANYTHING goes.

And the reason why the world switched to Intermediate Cartridges is because mobility and logistics. When modern military doctrine essentially means that overwhelming fire is better than accurate fire: a smaller, lighter bullet means you can carry more for the same weight, without needing to resupply as often. Most ammunition spent is actually suppressing fire to keep the enemy from shooting you.

Being able to create endless ammunition on demand because of magic means that you don't have to carry as much on you, while not having to worry about running out.
I think you underestimate what bullets actually do and how they interact with tissues, bones and organs. Ever heard of term Temporary Cavity?
Temporary cavity is relative to the speed the bullet travels, and its mass. The heavier and faster the bullet, the bigger and more damaging the cavity. Problem is that for a bullet to have around the equivalent damage of a melee weapon (hacking off, destroying limbs), you need a round that kicks like a mule and is completely uncontrollable in anything other than slow, single shot.

Also, most of the energy simply passes through with the speeding bullet, instead of transferring to the wound. Relatively slower, heavier bullets transfers most of its energy into the wound - meaning less range and penetration, but more devastating wounds. This is the reason why people in bear country prefer slower, heavier bullets over faster, lighter ones for self defense. Stopping power is a thing. Bigger, heavier bullets simply do more damage than lighter, faster ones. You just have to carry the damn thing and deal with the recoil.

And thus is the reason why we cannot get modern weaponry in fantasy. To difficult to create system of how magic interact with physic's laws, and not stumble at it. It will be always shallow part abandon in favor something else. In games one of the best examples is Arcanum (damn, i feel old).

The only way to incorporate modern weaponry in fantasy is by making mages stupidly op enough to match soldiers with guns. You can also have knights with bullet proof armor, thus forcing a gunner to aim for weak points. Otherwise, it will be like the Kingsmakers trailer.
