It's essentially a form of "limited edition". If something is perceived as rare, then people will line up for it even if they don't actually want it that much, just because "I might never get another chance." Not to mention the people who go there hoping for the rare item who end up buying something else when they see it's sold out. Either way, the primary purpose of the rare item is as a form of advertisement, not because they actually want to sell more of it.Must be nice for a business to sell out early but at that point I'd expect (other than "hunger marketing") you'd think they'd either raise the price a bit more or double up on stocking ingredients but I'd assume the other stuff would be good versus them changing locations (at least they were right outside the shop, if they had sat down and saw it /been told by a waiter I'd feel too awkward to get up and leave)
I expect they run out early depending on the morning's catch. If they really hadn't caught much by the time they needed to start cooking, they're stuck. I've seen that here in fresh seafood restaurants along the shore.I get the appeal of something cool In summer but I'd rather have some warm if not room temp noodles tho i guess I do occasionally have spring rolls tho our dipping sauce for it is warm
