Surely Gaile must still have some means to defend himself when the opponent is not an undead? You would think he would have something that curses the opponent. With his skills, the curse would render the cockatrice as helpless as a regular cock.

I don't suppose this is where the sword conveniently comes in handy? Both Maura and Sharina are still depleted from the last fight, Gaile still has energy since he only expended items. If there was a time for him to use the sword, that would be now. And it's perfectly valid for him to solo it this time because his teammates are legit spent from battle and can not assist him.
