In the middle ages, with particularly with heavy winter, you ran out of dried firewood.Do they live in a place where it's only cold two days a winter? Surely they should have far more firewood stored away and not rely on randomly picking branches from the forest floor if the climate has even remotely cold months.

Felling a heavily humid tree at that point would be a liability in term of the smoke being dangerous, so dead branches on the ground would be a good option until you dried another batch of felled tree.
