What a funny way of handling dialogue... maybe they felt this got across his accent better then the standard 'have the foreigner speak in katakana'? shtick? I think i like it better- it feels less patronizing. I have to admit reading as much food manga as I do has left me really wanting to try drinking bar offal stew....

That's right. Japanese language abbreviates a lot of words. 'Motsu' is innards, 'nikomi' is stew. Put them together and you get 'motsuni'.
