I think Yamaoka prefers it because for all the bluster and bullshit he had to deal with, he’s still allowed to be fundamentally lazy most days. He could never get away with napping and goofing off like he does as a chef. It’s just not possible. Also, you have to have a real passion for food, and Yamaoka doesn’t, really. He has training, but no passion for it.
