I remember seeing that whole "Face of the chef" thing in Shokugeki no Souma. Oishinbo is clearly a big thing in Japan, and I've seen Kaibara make funny cameos in other series before, so I wouldn't be surprised if Souma's creators took that idea from this series.
I think that's pretentious, LOL. What even is "seeing the face of the cook"? Like, obviously different hands and habits naturally could produce slight differences because a lot of cooking is done by instinct, especially if the idea is to innovate and not be stuck to the same recipe. But most people are just gonna judge by "I think this shop's sushi is better than that shop's sushi", or "the service/environment here is better". Not many people particularly cares for a unique flavours or menus.
I think it works in Food Wars cus itreats itself like a shonen battle manga as heightend reality, and the face of a chef is treated as " This is dish so strong with individuality, you can TELL " oh its this chefs work ". Souma loses cus his dish is good, but any good chef could make it. Kurokiba loses cus any good seafood cook could make his. Hayama wins because only his skill and sense of smell could make THAT dish.
There IS some truth to that, but its more your own familiarity that makes it so, like I mentioned with my Grandma. I could pick her food out of a row but I've also had her food across 31 years of my 31 year old life.
its a sort of "psychological vagary" that....works for a cooking manga, but is kind of just preference showing its head.
