I have lamian (Chinese ramen) in Vietnam all the time and one thing I noticed about the noodles was the sharp bitterness of the chewiest kinds of noodles. I don't particularly hate it but that's how akaline water or kanshui can affect the taste of the noodles.

You know what, one day I will find some ramen to eat to compare the noodles. It's just that ramen is bloody expensive here so I only have it for special occasions.

The kansui used for the noodles was fine in the twin brothers episode, why worry about it now? Ffffsss.

Also, in the hiyashi chuuka chapter they said the bamboo kneading method can give the noodle good texture without the kansui. Does it turn out that it still isn't up to par to the chewy texture the kansui gives?

Ah, but you see, that would require Kariya to actually reference back to earlier chapters and arcs instead of pontificating on whatever new food trend or piece of trivia captured his attention at this particular moment. Who needs consistency and callbacks when you can just lecture the reader for an entire volume? Blech.

Ah, of course. Not contradicting oneself is so lame. Lecturing the readers arrogantly is the way to go.
