Just a remark. "Brat" and "Grill" is not the same.

"Ewas braten" would be "to fry something [in a pan]"
But there is a little more to it. You can make a "Braten"[<-Noun] (Here an example of a Braten made from Pork [=Schwein]: Pork-"Braten")

A "Braten" can be made in a pot (=braising) or in an oven. An oven (=Ofen) is often called a "Brat-Ofen" (Fry-Oven) Sometimes also called "Röhre" (=tube) [Just Röhre (Tube) or Bratröhre (Fry-Tube)]. In former times an oven would be more like a tube and there was fire in it. So, compare it to a barbeque. It this you also can fry something.
A "Braten" would be a good example because it is often made in an oven.

But yes, Bratwurst is often grilled, because "braten" means, to coock something without or with an extreme low amount of liquids or extra fat. So, while "braten" (frying) mostly refers to cook something in an oven or in a pan, it also can refere to "frying on an grill". Meaning, grilling is a smaller, specific part of frying, at least in German.

By the way, the inside of a "Brat"wurst is called "das Brät"

to be fair the plague was not a single all encompassing wave but a splotchy mess that spattered and faded from population centers and followed the asymptomatic or presymptomatic

Actually looking into some of the art the author seems to reference we see a few examples, none of which involve knives, but either an axe, the back of the axe (as in using the axe to bludgeon) and the one from wiki that uses a hammer. I would imagine that there were other methods available but that cracking the skill as a stunning move and prelude to slaughter, or as killing blow itself, would be reasonably common can't waste that tasty blood after all.

The author has picked a time after the first major wave of plague does down. As an added side benefit many parts of Europe benefited from an era of relative peace as rulers didn't have the cash to start many major wars (see for instance 100 years war having a decade-ish lull in major battles)
She has also chosen Southern Germany right at the start of Charles IV's reign a guy who clamped down on noble nonsense by empowering Reichsstäte and whose reign didn't see Empire-wide conflict until the 1380s, after his death leaves a 40 year interregnum. Germany and Bohemia at this time are kind of the best place to be in terms of lack of warfare.
