I want something different, where the reincarnated character quite literally only has their memories intact and need to regain their abilities through effort, and I want to accompany that journey!

The first parts of Kumo Desu Ga, Nanika? are like that.

Hell Mode/Garbage Balancing is has the main character starting on hard mode. He starts off in a very low social caste, and he has to grind/fight more than other characters since he requires much more EXP to level-up. For now, I am only watching the anime, but 10 episodes/powerpoint presentations in, the series has stuck to its premise without delving into power-fantasy.

The main character of Otome Game no Heroine de Saikyou Survival is training very hard and very slowly to become a terminator after getting certain "memories" back. No gods/cheats at all, as far as I can remember? But I think some of the chapters were taken off this site.

It's actually very challenging to think of examples of what you're talking about. I guess I haven't read enough. If we widen the scope to include isekai (different genre/theme, but same vibe), 12 Kingdoms is great for this. Being Isekai'd in that series is (basically) the same as being dropped in a foreign country with no documents in this world...but with magic! Re:Zero is also good. The author has a decent mix of weak characters, OP characters, and eldritch horrors. Characters from all three classifications wind up fighting with and working with each other.
