tbf, village heads and wealthier peasants can read/write during this time period, because they're the ones with property or managing stuff for everybody, so they better know how to read/write to keep records of taxes and how much money they still owe their lords. I imagine the illiterate peasants would bring their more complicated stuff for them to read.
Buddhist temples taught how to read/write, because obviously they want to convert as many people as possible to their religion. If they taught people the chants only by telling them what to say, some idiot is going to mishear the words and say something stupid like "Pee on Boobies" instead of "Praise Buddha".
The one guy in the village who can read and write is probably tasked with teaching the kids. It's just reading and writing, they don't have to learn poetry or write a PhD thesis!
The Japanese language's alphabet equivalents, Hiragana and Katakana, are super simple, because unlike English where words don't always sound like how they're spelled such as "island" or "knife", Japanese words do sound like how they're spelled. The hard part is learning about the Kanji system and grammar. So it's definitely doable if you ignore those and kept everything simple. For example, a notice about learning how to make baskets could just be a piece of paper with the words:
Shizuko's house.
10am.
Study.
Make Basket.
