I suspect this recent encounter with the Humans has opened Souta's eyes to the relationship between the Demons and Humans, making him realize just how serious his role as "the bridge between Humans and Demons" is, and decided to leave for the Human Kingdom to try and change them and their view of the Demons for the better from the inside.

As for the reason why he left in the manner he did, likely because he knew Fafnir would demand to go with Souta, and he felt that would only increase the difficulty of his mission too much.
