well she did 'die' so unlikely even with the memories (which at one point got 'reset' with her powers tho that makes me think if that person attacked OG!Jelly, if her personality would've changed too)
Considering she had steaks and full on cakes rather than individual slices practically daily since she came back with Jelly's body, the main mansion probably had enough supplies to give them more
So far she doesn't know (tho the other saintess claimed to give her advice?) to 'reinforce the barrier' but i assume it's just "pour mana" but not specifically thinking about healing, the only thing to worry about is if she over does it or so (although, other than depending on a saint, unless it's 'holy magic'/only they can do it, you'd think there'd be support magicians as 'backups' if not some knights/adventurers being posted to stand guard there and take turns from the stray monsters that might attempt to pass through if not just go outside the border and try to kill as many monsters as possible to where they wouldn't get too close)
Jelly is a slime, so to her, I think that there is not that much of a difference between a human and a friendly squirrel. I mean, she calls a human village a nest. (which works, until someone tells her where steak comes from —insert Madagascar gif here)
I've wondered about this a few times, three things come to mind.
Tbf, this one was partially on her also for not checking up on the domain she now rules. Like yeah it is ignorance because she doesn't know human ways that well but it is still on her partially.
She did cough up the poison/the heart stopped, the other Slime Girl told her to find a 'fresh corpse' (tho i wonder how many other Slime Puppets are out there in the world) but it would be interesting if she tried to 'take over control' Or it'd be like a Piccolo/Nail situation or Yami Marik or so, idk. If not some 'lingering instinct' telling her to suddenly be cruel
i suppose so tho i think as the og slime form she'd probably have a bit of distinguishing between them, like how the "Chief Slime" told her to avoid humans but other than squirrels somehow wanting to eat slimes i don't think they would've gone outta their way to avoid other animals that aren't necessarily carnivores (i mean i wouldn't be surprised if squirrels eat meat but i wouldn't expect to suddenly see one 'attack' another one )

The average human is weaker than them and, according to himself, the cloven head slime village elder fought the hero and survived. They might not be very high up the food chain but monsters they still are.

Yeah they definitely do. They're basically rats with bushy tails. They eat just about anything, including carcasses of larger animals. Even...well...humans.

Sure, but i would hope the average squirrel in this world unless they're considered monsters an adventurer would strike down alongside slimes wouldn't be capable of just killing an adult human by themselves XD; but y'never know maybe all the birds surrounding Jelly are also spies or so as well considering that hooded guy "revived a dead dove" at one point in front of will
