I could say it makes some amount of sense for slimes to actually be intelligent, since they can't depend on their strength for survival.

Maybe slimes are like the creature Calvin from Life (2017).
Each and every cell in their body fulfils the purpose of every type of cell. If so, the whole being of a slime is their brain and even a small clump of cells could reach quite high levels of intelligence.
Alternatively, the split-offs and the main body are connected through some magical hivemind. Considering the earlier attempt and failure at telepathy, this seems to be the case.

Maybe she'll tell him that he did succeed in killing her?

Maybe that will be her cover story for her reform. "I experienced death and then miraculously revived and now want to redeem myself by doing more good than ill I have commited" or something.

A misunderstanding will start that Jelly acted so evil because she was being cursed or possessed.
And by "killing" her, Will released the "true nature" of the Saint Jelly.

I'm going to go with this one vis-a-vis Magic! on account of we saw the intelligence in the pre-saint slime, and the requirement that the minislime reconnect with the main body to warn it suggests there's no hivemind (if perhaps a mutual sense of purpose). Either way, I imagine we'll soon see swarms of the lil fellas around the place

Unlike the former, she really does have the heart of a saint. So to speak, since she doesn't actually have a heart.

so having a slime interior might allow her to use 100% of her muscles capabilities without the risk of damage or tearing.

Or she might heal up quickly enough, or the slime substitutes for the torn muscles. Or magic.

That face Jelly made when being suddenly woken up is hilarious and scary. I also see it as the slime still hasn't gotten use to controlling the body yet.

Sounds like what he need is money or something like that, which is the reason he was working for the 'saint' in the first place.
