It's a balancing act. You get the more mild, subdued tones to cut the more sharp flavors of other ingredients. The subtle sweetness of the peppers lets you balance more acidic foods, like those using vinegar or tomatoes. You can get away with using less sugar/honey in your dishes if you add green peppers since they bring balance to your plate.
