Or he could mean protected from skills that can cause negative status effects or impact the mind.

Hmm... I think the GM (Guild Master) may have pointed the "unprotected" means on how he managed to sneaked on Fran without both of them acknowledge him there. We'll see in the next chapter if the answer is correct or not.

To be fair, there was a single old man recurring through the last few chapters, with the same kind of demeanor all throughout.

Kinda tracks it wouldn't be hard to identify him, with the hints given at least, once they showed him there in the guild.
