This is crazy, what was billed as just this bi-sexual gooning comedy manga has some of the most intimate and sometimes realistic flirting scenes I've seen in manga. Even compared to more seinen/josei style drama romance. Props to the author for providing a good example to teach young Japanese otaku on how to improve their game.

True. Many chapters ago during the festival I though, if they aren't dating by the end of festival or soon after, this is foul, but then they just keep dragging it along. But after this chapter I was like, okay, whatever, this shit already surpass that.

Which is legitimately more realistic to most people, at least outside of Japan. The weird formalized "confession event" thing is not seen in most young relationships, where you just kinda vibe and then eventually fall and start flirting just like this without really defining the relationship yet or announcing anything overtly.

I think it's also because in fiction confession creates nice and impactful milestone event, not just in manga, but I'm sure I also saw that in several Western movies. Also for so many will they/won't they romance manga you can put confession in the last chapters when you decide to end your manga, to put a nice bow on it for the viewers so to say. That makes confession way over-represented in manga, to the point that it's simply expected by readers who look forward to it.

Also with harem manga male MC is just vibing and flirting with every member of his harem, so you have to make the winner official with confession.
