I heard some botanist saying that actually most crops and plants “can” see their surroundings, it's more like a sensing that actually seeing as they lack an observatory organ. But just like you said, most evolutionary process from plants came from their environments, even leaves and sap are part of meanings to fend off predators or ways to perish.
