There are some words in Japanese that doesn't have an exact match in the English, so Sui might not have specifically called him Uncle. I also don't know enough Japanese to be sure of this. Anyway, I think Fel didn't want to be called that, because it probably makes him feel old or it's way too overly familiar (because Japanese culture) or something like that.

The LN translations treat Sui as female, the actual Japanese LN text doesn't gender the character at all. BTW the LN translations call the Fenris "Fer" rather than "Fel".

The name Sui uses for Fel is "フェルおじちゃん", Fel-ojichan. This is a bit more intimate and familial than ojisan, "old man" which can be shortened to "ossan", "old guy" hence the "uncle" translation.
