If you have knowledge on the types of monsters available and how to handle them, if you're only a little underleveled, say by +/- 5 levels, I think it's not too egregious. If you're a From Software vet starting a new From game, yes, absolutely. But this is like a From Software vet going into the same game they've been grinding for ages and ages. It's not impossible that they'll get killed due to some freak circumstances, but it's very unlikely. Even those speedrunners die constantly. If you watch Gino or Distortion or whoever routing/practicing a run, just gravity does gravity things pretty regularly. Even if you're experienced, you're essentially going an unrouted, blind and deathless run.
