My best guess is that the real problem of the party is that "uncle"; if he really is as knowledgeable about "stuff" as it's been hinted, he should've known the "true" potential of the dude they let go, unless of course he has some sort of agenda and seeing as the party is all girls and him... well, at this point I just want to know wtf is happening and why.

If you ask me, it would be quite a pity if Frey can simply be taught teamwork and all will be well. If she belongs to the dragon tribe, she should be unreasonably prideful genetically.

This just feels like Daru is the mc, there’s nothing special going on except this uncle that people looked down on is actually a really talented and great at teaching people which will bring out their potential. There’s already so many with this exact same plot without the stupid setup of “drama” at the start.

The problem is almost certainly that Monchi02 (the writer) had an interesting idea with which to start a story, but no idea whither to go from there. And nothing has since come to him, so he's been churning-out a very generic story. Now one of those generic elements is dissonant with the initial premise.

idk if you're speed reading this or what, but they have a clear motivation as to why they let go of the buffer guy. The party leader girl already said that she does not wanted to see her childhood friend to suffer and died in front of her eyes.

To which the boy later understood why she expelled him from the group, since he also have his own new party member that he appreciate, and does not wanting to see them dies in front of his eyes

Not really speed reading, it has been hinted that the "uncle" guy knows more than he shows, and remember that when the dragon girl arrived "uncle" dude got mad at her and Athena intervened "worried" of him being mad, which also hints that he's way stronger than he shows; and the fact that he didn't even try a little more harder to fix the misunderstanding he had with Est (ch 3) says a lot and he even rubbed on his face that he "understands better" Athena (ch 5) than Est ever did.
And seeing how Athena actually listens to his opinions and all that, he could but didn't do much else tells that he wasn't all that against Est being banished from the party or that even when the party is suffering more with the dragon chick, but instead of looking for a new party member he chooses to "work" their teamwork, like dude, couldn't he have done that when Est was in the party? Obviously no, because he has a secret agenda.
The fact that this has a romance tag, tells a lot.
NTR without going through most ropes that NTR has.
No wonder even the WN got a low score.
But I'll keep reading, I wanna know if I'm right or not.

The issue with Est was the opposite side of the same coin. That doesn't mean it's equally workable, though. Est had the will to work with them but he didn't have the ability. With dragon girl, she has the potential as long as she learns to cooperate. Est hadn't been able to use any ability other than enchanting since he was a child. Nothing he did or could teach him could resolve that (they recruited him as a mentor so the fact that he knows more is known to the whole group). The fact that Est suddenly changed after wasn't something that could be taught nor does it really make sense, it's just that that's how these stories work. Before that, he couldn't use the magic needed to physically fight monsters so he couldn't defend himself and got badly injured. Daru already advised them to keep waiting but when it already got to the point where Est was almost getting killed he couldn't keep telling them to wait for Est to suddenly figure something out.

Also, where does it have a romance tag? I've seen the end of this manga, I've read the webnovel past the translation, there's neither romance nor a romance tag listed there.

Very much this. There are two ways I think this could have gone: the Est Dies route and the Est Lives route.

In the Est Dies route, we get the same beginning, where they kick him out by saying horrible things to him and Est goes to the dungeon out of frustration to try and prove he's not worthless. Only, he actually dies, because he doesn't get any plot armor and he was always just a buffer. Stardust learns of this and they're positively crushed by guilt, Athena in particular since they're childhood friends.

From there, it could also go two ways. For a more tragic ending (for a loose interpretation of the word), it could be them figuring out that Est was the only thing carrying them and after a string of failed missions, they drift apart, the party breaks up, and everyone goes home. The end.

For a more bittersweet story, they could learn that Est was carrying them and struggle improve, slowly regaining the strength they thought they had, while always carrying the memory that it was only because of Est that they had such an easy time of it and, after awhile, they retire as adventurer's and open an adventurer academy (or something similar) dedicated to teaching and training new adventurers so there won't be any more Ests.

In the Est Lives route, we get the same flow of events up until the dungeon. This time, it's truly an "expelled from the party, but from the perspective of the banishers" series, where we see that they truly regretted expelling Est, but thought it was the best for him. Then they learn he went into a dungeon and not only survived, but unlocked some hidden ability to allow him to thrive, but Est never actually returns to Stardust at this point.

From there, Stardust just gets weaker while nobody can stop talking about Est's meteoric rise, rubbing their guilt in their faces, but we don't actually see Est until Stardust has actually started to claw their way back to the top once more, this time under their own powers (sorta like in Est Dies bittersweet route), just as a three-man group. Or maybe as a four-man group with an older woman as their fourth who becomes a proper love interest for Daru.

When Est finally does reappear, it's well after everyone's had time to calm down and reflect, so things are a lot more chill. Stardust apologizes for their harsh words and explains why they did it, which Est accepts, saying he'd already figured that was the case and didn't bear them any grudges (any longer, at least).

The best ending for this route, I think, even if somewhat generic, would be if Stardust and Est and his new party all joined into a single guild, Est and Athena got together, and they all contributed to starting the adventurer academy from the bittersweet Est Dies route.

If nothing else (and I'm fully aware I'm tooting my own horn), any of these options would probably be better than what we've got now.

That series is so "meh".
Let's say you banish him because you don't want to see him die, they were close to have the same dream Est & Athena, did they expect kicking him would make him stop being an adventurer ?? Can he even do anything else ? How can she claim having thinking about it a lot when in the best case scenario ( without plot armor ) he was doomed to either die or being used/bullied in another party ( and probably die too ).
I don't even want to spend more time explaining why that series is meh, I feel like I am stating the obvious.
