The old version combined several of the earlier chapters into one, so their numbers are different.

Probably true. Some convenience store / market hamburg steaks are really mediocre. The ones they serve at actual restaurants are better, and the ones you can make at home following a recipe can also be better if you follow a good recipe and are a skilled enough cook.

It's honestly not that hard to make hamburg steaks (if you can make meatloaf, you can make them) and home made is often better than convenience / market deli quality stuff.

The meal from the store has been cooled and stored, maybe made the previous day or even earlier if it's industrial. You need to reheat it. It's obviously not going to be as good as one straight from the kitchen.
