These are early game bandits, the ones you find outside the starter village, wearing cheap fur armor, not the late game Skyrim kind that wear DLC armor that matches your current level.

"But he's probably weren't listening" is grammatically jarring. Instead I would phrase is as "But he probably wasn't listening".

The change for "he's" to "he" is due to "he's" being short for "he is". So this usage is present tense, when it should be in the past tense (was).

The distinction between "were" and "was" is a little bit more nuanced, but I believe it depends on the plurality of the subject. I.e. I was, He/she was. Vs We were, They were.

Take my notes with a grain of salt however I'm not an expert in any way

Deer spook real easy. If they aren't used to people, then "People walking around" is enough to get every deer in the immediate area to nope right out of there.

Or more accurately, as soon as one deer starts running they all do. So a deer herd is as brave as its most cautious member.
