I saw a "harem" tag and it kinda ruined for me.

What is the point of having a harem when the main plot is MC going back in time to save the woman he loves? Making multiple girls falling in love with MC and following him is a waste of time and plot
Its for views really. Gets more sales. Also I think this Manga is missing the Shota tag.

how does this guy know specific details of something that happened when he was a child on a matter her was completely unrelated to...?
He could probably know through people having records of it or someone telling him in the future.

I mean this is a ducal family after all.

Well, it’s probably because Mc’s allies most likely will be women, thus why the harem tag exist, but hopefully there will be no romance between them.

Fr, it's not like he's been preparing for so long with those full of articles on his walls and papers on his desk shown in literally the first pages of the first chapter. So in conclusion, the author just pulled it outta his ass.
I mean there is likely lots of things you can prep for or research as hindsight 20/20, yeah? I won't argue that, and this guy has been MOTIVATED.

But c'mon the exact time a random wandering merchant cart took a route, A cart which apparently was not caught at the checkpoint previously, and was trying to keep a low profile to escape with the goods?

I mean there might have been logs you could check as far as past tense event but we are getting mighty far down the "Aurora Borealis? At this time of year? At this time of day? In this part of the country? Localized entirely within your kitchen?" Kinda deal.

I'll bow out to your comment and wait and see what the author has the MC cooking, but it felt a little bit of a stretch for me so far.

I assume this is a type of "detective" story - so ultimately, its tropes are derived from Holmes. Dissecting and memorizing details is a minimal trait for these types of protagonists, and figuring out secrets by glancing at a few articles and logs is (while a stretch IRL) basically a superpower. There will be plot BS all over the place.

He could be using evil women by making them fall in love. We dont know yet but theres possibilities

to be honest i'm not sure if it is worth it to read a story that split the chapters this much, specially if it takes this long to release, i found interesting but maybe it is better to just forget that this exist and see if it wasn't axed 6 months later, so i will just left this on "plan to read"

It doesn't have to be an exact time, but inspections would have come at a schedule, so the merchant would have to leave before then. There can only be so many routes to take in a city, especially when the merchant is supposedly trying to sneak out dirty assets. Even then, the bandits' lackeys can just fill in the blanks themselves with their own information network - not that it would be too difficult to find out - nobles are celebrities. They just needed a tip on what to look for in the first place.
