Because it's perfectly logical. By this point Arvel knows that the key events will keep happening unless Arvel takes the issue out at the root. Even if he does marry Seraphine in this timeline, there's no guarantee that Shou won't still end up dying of some other stupid cause, or the prince won't try to fuck everything up again. So the logical step was to keep everything MOSTLY the same, and trace out what's different and gain new information from that. Like savescumming in a visual novel game.just a personal rant here, id rather have her dispatch every single of them, arvel included.

I don't disagree that he's a jackass by doing this and not telling the plans to his family, but it is logical.
