I also find it to be a weird conclusion. He saw her talking to a Mandragora, not making it. In my opinion it looks more like this Witch who specializes in plant magic just found a Mandragora and then told it not to hurt people before letting it free.Page 19: Honestly he sure does some leaps of logic (even tho he's right). Notably in WN none of such speculations were present. He decided to side with her mainly because he sympathized with what he thought is a voice curse making others hate her as his eye curse does. Kinda posessive and creepy, but here he just randomly goes "she gotta be the root cause of it all, but Imma do nothing 'cause, uh, she saved me?"

I'm confused now as to why she thought he knew she could speak since, from her perspective, he never properly heard her talk otherwise he would have the curse mark on his chest.
No, she now gets that he did hear her back then and that his own curse saved him. But until this chapter when he confirmed he had heard her, she should have assumed that, since her voice was still lethal, yet he wasn't cursed, that he hadn't heard her back then (I mean, he was delirious and unresponsive as she was drooling all her fluids onto him) and did not know she could speak. As far as she could tell, he was responding to something else. He himself should not have assumed that the voice came from the witch; if the witch does not speak, and he heard a voice then he should assume that someone else was with the witch and talking to her, before the witch came to save him.It's in that same chapter I linked.
She heard his voice, seemingly replying to hers and that's how she found him collapsed nearby.
As for the curse mark, literally this chapter have him explains it: Cursed people are immune to effect of other curses (she's 'immune' to his eye that invoke hatred, he's immune to her curse voice)
