You can't tell for sure which part he's referring to when he says "that was [her persona]" but I'd lean on the making a snowman, childish part, as it fits said persona and is consistent with the guy in the background moving shit and commenting on her playing in the snow.

I have always liked this kind of pushy and manipulative woman, and I feel like Ayano is becoming more and more my type. Like damn, her acting in this chapter was phenomenal and the only realistic way for her to get what she wanted. The kind of lies that can even the playing field with adults when you are at that age. It got my heart racing
If I were in Ishiki-san's shoes, I would give in to Ayano on the spot after seeing that.

If it’s written in Hiragana, it’s her stage name. If it’s written in Kanji, it’s her real name.

In this case, when Fumi calls her by her stage name, I assume he is referring to her stage persona, i.e. that she was acting — it wasn’t the real Ayano.
