Eeh, Yuujirou probably would've killed or at least knocked out the captain with the goal of surviving a plane crash unharmed rather than the goal of just performing a pseudo hijacking (since Baki presumably left the captain to continue piloting after blowing in his ear). Not quite there, I'd say.

I thought about this again and realised that's actually some insanely violent terrorism even more evil than part 1 Yuujirou would showcase; he'd more likely get Straydum to have an airforce pilot take him into the air, then have that pilot parachute out safely as he barrels toward the ground in the plane. That sounds very much like a chapter we would get, half-comprised of an interview with the pilot.

That was in Baki Dou a little before Baki had hsi final fight with Musashi, where Kosho said to Baki something along the lines of "you are so strong and your body is like a weapon to the point you could hijack a plane if you want to"
