sounds like they worried ludwig jr. stagnanted, but hes already been bouncing back since visiting nobu

ludwig sr. reminds me of erinas mom from food wars (but not a rude scumbag lol) i dont think hes losing his sense of taste, but having a god tongue his whole life, everything just starts to taste bland. thats why he focused on the textures and cookin technique

The funny thing....
Ludwig Jr ends up recruiting Hans to help him out so in the end it became something of a collab between the two store anyway.

Specifically he want to create a new addition to the famous 47 dishes course, making it 48.

oh no Lud1 told Lud2 that because he couldn't taste, then didn't know what to say because he can't help with the taste. Overly awkward but ultimately kind and loving old men, especially when they only know how to work, my one weakness

He is fairly old to start losing some taste. It's either that or he grew so accustomed to the regions taste that he is forced to differentiate any dish he encounters thru texture and quality.

Knowing European cuisine, the latter might be the case due to the lack of spices that is only found in Asia which in turn lower variants of the cuisine before the spice trade.

He's losing his sense of taste and the son got depressed over a misunderstanding.
I think he believes his son is overconfident (and he was) and that he needs to become more humble. Taisho and Ludwig the younger are both talented, but Taisho has the consideration to recognize that the father lost his sense of taste and serves him a dish that he'd enjoy, while the son saw his cooking as perfect and didn't pay attention to his customers or try to improve his cooking. He's better now though.

That makes so much sense given how Taisho's role is changing into that of a mentor, and Hans is growing into his own identity as a chef.

It makes sense that while there are clear analogs to traditional foods, Taishou at his core is trained to cook izakaya food, which are fundamentally different preparations.

It feels like the author has completely forgotten other people work at Nobu than just Taishou, Shinobu, and Hans.

Lud Jr.'s cooking even if the taste was amazing probably didn't have the best texture, at least not up to standard for the famed establishment, and made more obvious to the old chef's non-existent sense of taste.

If the texture was at least serviceable then Lud Sr. would have said so instead of saying that it was unpalatable.
