@REDS (and the manga) is referring to Chinese
lamien. The noodles are also made by chopping dough into noodle-like slices, but the difference here is that the chef stretches the dough out instead of flattening it (in Mandarin, the word
la means "pull" and
mien means "noodle").
However, in English culture, both Japanese ramen and Chinese
lamien is both translated into ramen.
