For those who can't understand why pancakes would be so hard to make, they're talking about Japanese soufflé pancakes, which are very different from normal pancakes.
The main appeal behind the "soft and fluffy" pancakes is the appearance/structure, which is airy and slightly spongy, kinda like a marshmallow. They're much thicker than normal pancakes.
I've tried making both, and regular pancakes are a hundred times easier to make. Soufflé pancakes take a lot time to prepare and make, and both have to be done back to back to make them rise and maintain the aeration in the batter.
