Why is this classified as Shounen if the MMC is an adult?
It's a sign that this will be fluffy and sweet more than horny. It still might get horny though, the manga industry is pretty lewd even when publishing stories for boys. I'm rooting for fluff.

I glanced at it, it's just implied sex and no nipples or genitals. It's still shonen. A big example would be Fairy Tail.
In the west, it would be pg13 i guess.
First chapter I looked at (12.1) kinda blew this explanation all to heck.

Its target demographic, not character age. Seinen has mature themes not suited for kids.
That's also what I thought in the beginning, but I remember someone saying shounen also refers to the magazine the manga is in. So you can have seinen like manga in a shounen manga magazine and then it would be labeled "shounen".

So shounen is the target demographic of the magazine, but sometimes a few manga get published in that same magazine, even though the themes aren't quite for adolescents. The question is, why do the publishers publish those kinds of manga in a shounen manga magazine? I guess sex sells and kids get money from their parents and put it in the publisher's pocket. Money they might not have gotten otherwise. Idk

You make intuitive sense don't get me wrong, but I present to you Dark Summoner to Dekiteiru: a shounen erotica.
Easy answer why:
1st, you have to thank To Love-Ru for that.
2nd, the erotic nature of it is played for laughs. If the erotic nature of it is given more hard presence as the focus, it'll turn into seinen just like Masou Gakuen or Shinmai Maou.
3rd, once again, you have to thank To Love-Ru for that. (Freakin' Jump man...)

Manga classification is usually done based on the demographic of the magazine in which it is published. The age of the MC usually but does not always match that classification. EDIT: I see this has already been answered...
