I think only Horimiya comes to mind for a romance manga to continue after the couple gets together.

There's quite a few, actually. As someone else already said, Bokuyaba, Uzaki chan, Hitomi chan wa hitomishiri (wich ended recently), but also others like Kaoru hana wa rin to saku (the fragant flower blooms with dignity (one of my favorites)), Yancha gyaru no Anjou san, Arakure Ojousama wa Monmon Shiteiru, Ushiro no seki no gyaru, Honey Lemon soda, etc. There's a lot in Reiwa era, but even some older ones are like that, like Karekano.
I'd also recommend Jitsu wa watashi wa, my favorite Romcom, but more for the "com" part.
