I hope the author lets her grow in her own way and become independent. Nothing would ruin her character more than if she regressed to being someone who was always saved by the MC

Oh man, this feels like someone is about to wrap up an arc!

The whole "sorry cant help but sign away my child's rights" plots just end up creepy and contrived.
One of the issues with Japanese fantasy (and I'm sure a lot of fantasy in general, I just see this a lot in Japanese stuff) sometimes is that they write these fantasy characters with generally modern sensibilities. Nothing inherently wrong with that. The issue comes from when these generally modern sensibilities run into fantasy setting elements that mesh really poorly with how the characters (and the way the writer wants the audience to) react to them. The actions of Latos' father are a good example of this, he's meant to ultimately be sympathetic, misunderstood and mistaken but his actions are so comically archaic compared to how he acts and talks about them (how any character talks about them really) that the whole situation kind of feels very ridiculous and contrived.

Hmm I wonder how she'll fight. I feel its a safe bet that she will show everyone shes a girl with, probably, the biggest tits in school. Consider when she wore girl clothes and was told to finally breath by our MCs master she obviously felt more powerful. I feel she will be able to win against him since she is no longer restricted in her breathing in and allow her power to flow.

Practically forgot what the plot was until I remembered the main character was an attributeless maniac trained by a lolibaba and best friends to a hero who got isekai'd yet still has zero presence.

IMO, it's more the readers of modern fiction, those that can't separate fiction and reality, that created inconsistent characters.
You can read previous chapters comments and see that it upset people that a aristocratic noble father decided the path of his daughter, forgetting how a family (a noble one at that) worked at that time.
As manga is serialized, I wouldn't put it past the editor to prevent from meaningless friction with the readers.

So in this way, we can see Reese prove his devotion to his future wife good friend while Latos herself shows her own resolve without this feeling like OP MC solving everything alone.

For once that isn't really the case as others have pointed out here father had actually been extremely reasonable. Him not canceling the marriage had nothing to do with him being an asshole and everything to do with the noble system itself. Him canceling it would take an insane life changing amount of money. Once again the story surprises me by doing the usual noble daughter marriage trope but actually making it sensible from both the parent and child side.
